ABSTRACT
This study aims to determine the effect of using dragon fruit to the color, flavor, taste, and texture of chicken sausage. The research method used using Completely Random Design (CRD). The treatments were T1 (0%), T2 (10%), T3 (20%), T4 (30%) with six replications. The parameters observed were the color, flavor, taste, and texture of chicken sausage. The results of the experiments were using red dragon fruits was very significant (T <0,01) to the color and texture of chicken sausage and not significantly (P> 0.05 ) to flavor and taste of chicken sausage. The best result was using red dragon fruits 20% because the color of
chicken sausage was red and the texture good.

ABSTRAK
Penelitian ini bertujuan untuk mengetahui pengaruh penggunaan buah naga terhadap warna, aroma, rasa, dan tekstur sosis ayam. Metode penelitian yang digunakan adalah Rancangan Acak Lengkap (RAL). Perlakuannya adalah P1 (0%), P2 (10%), P3 (20%), P4 (30%) dengan enam ulangan. Parameter yang diamati adalah warna, aroma, rasa, dan tekstur sosis ayam. Hasil percobaan menggunakan buah naga merah sangat signifikan (P <0,01) terhadap warna dan tekstur sosis ayam dan tidak signifikan (P >0,05) terhadap aroma dan rasa sosis ayam. Hasil terbaik adalah menggunakan buah naga merah 20% karena warna
sosis ayam merah dan teksturnya bagus.
