The Extraction of Amylase Enzyme from Mung Bean Sprouts as Catalyst in the Hydrolysis of Cassava

ABSTRACT

The utilisation of bioenergy has proved to be an effective solution to reduce the consumption of fossil fuels. One instance of the use of such bioenergy is bioethanol, which is also known as ethanol or ethyl alcohol. Having the chemical formula of C2H5OH, ethanol is essentially an organic compound with a noteworthy superiority in comparison with ordinary gasoline, i.e., it is capable of reducing the amount of CO2emission up to 18%. Bioethanol is resulted from a series of processes, one of which is the hydrolysis, where the presence of an element called the catalyst is pivotal to expedite the chemical reaction. Using the amylase enzyme extracted from the sprout of mung beans as its catalyst, this research aims to establish the best time of the chemical reaction resulted from the use of the concerning catalyst, the amount of the enzyme being the most suitable for process of hydrolysis, as well as the efficacy of the use of the enzyme in the hydrolysis. In the process of hydrolysis, besides amylase enzyme, glucoamylase enzyme is another element of necessity. The research draws upon the Brix analysis, reducing sugar, total sugar, and Dextrose Equivalent (DE) as parameters. As for the means of data analysis, the researcher opts for the so-called Completely Randomised Design (CRD). The result of the research reveals that amylase enzyme has the capacity to work as a catalyst in the hydrolysis process as it establishes Brix point of 12, reducing sugar of 8.51%, 16.91% of total sugar, and 50 DE point. These numbers also indicate the production of glucose syrup from the hydrolysis.
